Having all Kinds of Fun

Pat Soul Cat Toner came in last week.  We hadn't seen each other in 35 years.  Since we both worked at The Best Inn on Roselle Street in Linden, NJ.  He was playing in a Band Midnight Thunder,  I was running the concession and helped book the Bands.

Soul Cat recently released an original album called New Horizons.  It is on ITunes.  He has the 1970's Sound Down,  with Authority. He is a very good singer and sings all his own original tunes.


Gary Tripps (Gary Trippedi)  played with Willie Nile a couple of weeks ago.  He does an excellent Saxaphone Solo on ONE Guitar,  that is the name of Willie's best song.

Willie Nile now has the number one selling album in America.  It is called American Ride. He is on iTunes.

Gary started out playing in the yard of Santillo's Pizza in the 1970's.  He remembers playing for my brother Vinny's Birthday one year. 

RAVE ON BAND   Starring Chris Roselli actually played right here in our waiting room just for me a couple of months back.  I recorded the show live.

www.rocklandboulders.com  Two of their best players  Nick DelGuidice and Steve Cardullo became best friends with us after they stopped by in May.  We went to see them play June 25 in Yogi Berra Stadium.

Movie Actor Clem Caserta who starred in all the Dinero Films is an old friend and a frequent visitor.  He added me to his Facebook feed.  Now every time he puts a post on Facebook my name gets mentioned. He gave me a bunch of autographed pictures of the best scenes in Movie History.

BRAVO NETWORK CALLED

Bravo Network called last night.  They wanted to thank me for the leads I had given to them.  They were successful in finding a few new characters for new shows they are working on.  The shows are similar to Real Housewives. of New Jersey.

They originally called months back.  They are wrapping up production about now.  I don't know when the shows will be out.

There is a lot more to the story.  Maybe Later.

Revelations

So, Yesterday I make a Large Sicilian Pizza with  Sausage.  It was like 11:30 AM  then Customer calls back and cancels. Not to worry he wants to still pay, so O.K..  Now the Pie sits in the Pizza Bag for hours, after a while I go and open the lid on the box so some air can circulate through the box and allow the pie to air dry naturally. Several hours later still i remove the pie from the pizza bag and place it on a shelf. All day long now the pie is sitting out.  It is twelve slices so there is enough for anyone else to have a slice or two, whoever is around.
So, Now it is about 10:00 PM   I still want something to eat.  I had two slices of cold pie which had been aging and airing since the Morning.  It tasted so good that I decided to have a third slice.  This third slice I place in the Brick Oven to warm it up a bit.  A couple of minutes later I am eating my third slice hot out of the oven.
You know what?  The pizza that I reheated tasted great, but the cold pizza (which was actually room temp) tasted even better.  I was like WOW !  Holy WOW!  I don't even understand and I should understand. I don't know how to explain it.  It's like Magic. Just like Magic.  It is unexplainable!.

About Reheating Santillo's Pizza

Santillo's Brick Oven Pizza improves with age for up to five days if properly stored.  I know of many different ways to wrap and store the pizza. They all have their own qualities to impart the pizza.

Firstly, I would say that a good customer keeps his in a special Tupperware container meant for celery. I suppose any kind would do.  I would however, if there was air space remaining in the container prefer to also cover the pizza with something, also.  Such as, maybe a wax paper or piece of plastic wrap just to keep the air off it.
Secondly, you could leave it right in the box it came in.  However, this could dry out after a couple days if you open the refrigerator often. So open the box and cover it with plastic.  You could use aluminum, but it might coalesce with the cheese, not good.
Thirdly, you could take two slices at a time back to back and put these into a glad bag, Good.
I use Tidy Wax (to absorb moisture) then aluminum foil if I am going that route.
Santillo's Brick Oven Pizza is 100% Made Fresh From Scratch everyday.  Like all Italian Food when it ages it marinates and as a result improves in flavor.

Re-heating your Santillo's Brick Oven Pizza.  I leave that up to you.  However, if you persist I can recommend never heat it in a microwave oven.  It turns pizza into plastic.
I think a toaster oven one slice at a time is fine.  Also, many people now have a convection oven which I think is fine.

A regular household oven is fine.  It's use depends on how you like your consistency.  If you don't mind somewhat limp pizza.  You could simply turn the oven on, place your slice or two in then turn the oven on.  By the time the oven is hot the slice will be ready.  This is also a fast method.

Preheat  the household oven to 400 degrees then place pizza in on a preheated cookie sheet brings a good result, also.

Oven Stones.  I have yet not personally seen One that I am satisfied with it's results in baking.  It might be fine to reheat on, though.  Not enough experience to really judge.
The Fire Brick which I use in Santillo's Brick Oven are expensive.  These are all that I use and pay dearly for when I need replacement bricks.
However, If you need only one they should cost $30.00 for a one square foot brick. I could get them if anyone were interested. They are truly a marvel to behold.  One brick is very heavy, they are made out of ultra-purified clay that is then fired to 3,000 degrees.  An impossibly high temperature.  This makes the brick so strong that it can literally be used for hundreds of years under normal temperatures.

How the Magic Brick works is, you preheat the brick at a high a temp as your oven will allow for maybe an hour.  Or as your experience dictates.  You would then turn down the oven temperature to maybe 300 degrees.  Now place your product directly on the brick for a truly unique experience . Now you are baking like a pro.  See if you can develop a taste for that and you will be rewarded with delectable morsels until time immemorial.

Other benefits of the True Fire Brick.  You could just leave it on the bottom of your oven all the time.  Let it live there.  What this will do is allow your oven burner to come on less often during the time you are actually using it to bake whatever you are baking.  Less burner running means for even, consistent and better finished product.

Top Major League Baseball Scout Discovers Best Pizza


One of the top scouts in Major League Baseball is Los Angeles Angels' Assistant General Manager, Scott Servais. Servais is not only  head scout but is also currently responsible for training Albert Pujols, Mark Trumbo, Torri Hunter (2012), and Mike Trout. Prior to joining the Angels in 2012, Servais was senior director of player development in Texas. Prior to joining the Rangers in 2005, the Texas farm system was  ranked 28th, within 2 years under Servais, the Rangers became the #1 ranked farm system which led to 2 World Series appearances and the 2011 World Series Championship. Members of the Rangers under Servais included, Michael Young, Nelson Cruz, Ian Kinsler, Josh Hamilton, Mike Napoli, Andre Beltre & Cliff Lee. 

So last night (Good Friday) while being in the Northeast (USA), days before Opening Day, the top MLB scout took a timeout from searching for the best teenage baseball player in NJ, and focused on finding the best Pizza Pie. Leave it to a top MLB scout to walk into Santillo's Brick Oven Pizza to order a Sicilian Pie and spend a few minutes with baker/owner Al Santillo. Below is a video clip of the visit:

Another "Good Friday" Customer

A visit from Scott Servais is great for business, but an even more valuable customer is Elizabeth's own Anthony Colletti,  St. Mary's Varsity basketball coach for the last 20 years. Coach Colletti has been eating Santillo's Brick Oven Pizza his entire life !!! (below is a Picture of Coach Colletti when the Santillo delivery guy rings the doorbell)
